Building on his father’s visionary transformation of a chicken farm into a popular arts and crafts studio in the 1970s, Dave Wallace founded Bittersweet Herb Farm whose all-natural gourmet finishing sauces, oils, balsamic vinegars and specialty jams now are available in thousands of gourmet food and gift stores from Florida to Alaska as well as overseas.
The company’s roots lie in a fledgling herb business Dave started in the late 1970s on the family farm in Branford, Conn., and are reflected in classic flavor combinations, such as Wasabi Ginger Finishing Sauce, Peaches and Cream Jam, Pear and Lemongrass Balsamic Vinegar and Sun-dried Tomato and Horseradish seasoning rub.
In 1990, we moved our family and the Bittersweet Herb Farm business to Shelburne, Mass., in the beautiful hills of the northern Berkshires along the Deerfield River. We strive to have our products combine the wholesomeness of small town America--with natural ingredients and artisan practices--and gourmet chic by displaying our products in beautiful Italian glass bottles.
We produce a line of five versatile finishing sauces, which can be used as marinades, basting sauces on meats and fish and as accents for rice or potatoes. They also can be used as a dipping sauce at the table. Our balsamic collection uses high quality vinegar from Modena, Italy, in five delicious flavor combinations as well as traditional balsamic flavor. Our herbal oils include a touch of essensial oils and are bottled with dried herbs for full bodied flavor and an attractive display.
Bittersweet Herb Farm also produces gourmet dried seasonings in packets and Italian glass jars for use as rubs on meats or to enhance everyday cooking. Also available is a line of seven jams in creative combinations of fruit and exotic spices. We gift package most products in handmade wood crates.
